Carrot (Daucus carota) is preferably grown in elevated areas where the temperature is low for roots to develop. Soil type must be sandy loam which is friable and has good drainage. It is harvested by uprooting the plants and cutting the leaves up to 2 centimeters from the root base. The orange pigment of the roots is due to phytonutrients carotene. Carrot is an excellent source of vitamin A and C, calcium, potassium, and phosphorus.
